About Chef Brennan

Chef Brennan started cooking as a teenager, working in his father’s small restaurant in the suburbs of Washington DC. From there he made his way to famed NYC restaurant Le Cirque and then to Europe for two years of cooking at the most prestigious Michelin-starred restaurants. After returning to the US, Chef Brennan opened Picholine, which earned him 3 stars from the New York Times, 4 stars from New York Magazine and 2 stars in the Michelin Guide. He went on to open Artisanal and the Artisanal Premium Cheese Center, a facility dedicated to the world’s finest cheeses. Chef Brennan’s recent move to the Hudson Valley has greatly influenced his approach to cooking and inspired the creation of his new restaurant at The Roundhouse. 

Our Philosphy

Our restaurant’s guiding principle is “Whole Farm Cuisine”. This means that we strive to source and create in a way that supports sustainability efforts. We look to use everything that our farmers produce, including rotation and cover drops. We cook with a “nose to tail” theory, which uses the whole animal, not just picking the prime parts as is standard practice for most restaurants. Through these approaches we create dishes that are better for you, the farms, the animals and the planet.

We suspect there may be some items on the menu that you have never experienced, or even heard of, before. We strongly encourage you to be adventurous, to ask questions and be curious, with an eye to ordering something new and different.

Wed & Thurs: 11:30am – 9:00pm

Fri & Sat: 11:30am – 10:00pm

Sun: 11:00am – 8:00pm
